Ինչպե՞ս պատրաստել ավելի դիետիկ եւ օգտակար ամանորյա աղցաններ

Ընդունված կարծիքի համաձայն՝ ամանորյա սեղանի բոլոր աղցանները շատ քիչ են կալորիաներ պարունակում եւ հեշտ են յուրացվում, սակայն իրականում այնքան էլ այդպես չէ. աղցանի կալորիականությունը եւ «որակը» կախված են բաղադրամասերից, որոնցից այն պատրաստվում է: Քիչ քանակով ձիթապտղի յուղով համեմված կաղամբի աղցանը օգտակար է եւ ավելի քիչ կալորիա է պարունակում, քան, օրինակ, թթվասերով եւ մայոնեզով օլիվիեն:
Ներկայացնում ենք դիետոլոգ եւ էնդոկրինոլոգ Հասմիկ Աբովյանի խորհուրդները, թե ինչպես պատրաստել ամանորյա ավելի դիտեիկ եւ օգտակար աղցաններ:
1. Ավելի լավ է մայոնեզն ու թթվասերը փոխարինել բնական սպիտակ յոգուրտով, որը շաքար եւ բուրավետ նյութեր չի պարունակում: Դրանից աղցանի համը չի տուժում, փոխարենը՝ դառնում է ավելի օգտակար եւ պակաս կալորիական:
2. Ցանկալի է աղցաններում բուսական յուղի քանակը նվազեցնել: Իհարկե, բուսական յուղը (ձիթապտղի, կտավատի, արեւածաղկի, եգիպտացորենի եւ այլն) առողջության համար օգտակար շատ սննդարար նյութեր է պարունակում, սակայն նաեւ կալորիաներ է շատ պարունակում, ուստի աղցաններին կարելի շատ քիչ ավելացնել:
3. Աղցանների որոշ բաղադրամասեր կարելի է փոխարինել ավելի օգտակար եւ պակաս կալորիական բաղադրամասերով: Օրինակ՝ շատերը մայրաքաղաքային աղցանին երշիկ են ավելացնում: Այն կարելի է փոխարինել ոչ յուղոտ մսով:
4. Որոշ աղցաններում կարտոֆիլը կարելի է փոխարինել լոբազգիներով, օրինակ՝ լոբով: Դրանց կազմությունը շատ նման է, եւ դրանից աղցանի համը չի տուժի:
5. Կարմիր բազուկը եւ գազարը շատ օգտակար են հում վիճակում, սակայն եփելուց հետո (խաշել, տապակել կամ գոլորշու վրա եփել) իրենց բոլոր օգտակար հատկությունները կորցնում են, եւ աճում է դրանց գլիկեմիկ ինդեքսը: Խորհուրդ է տրվում աղցանների մեջ ավելացնել միայն թարմ բազուկ կամ գազար՝ մանր քերիչով անցկացրած:
