Բաղադրիչներ.
- Կաթ – 1 լ
- Շաքարավազ – 1 կգ
- Կարագ – 500 գ
- Ձու – 10 հատ
- Ձվի դեղնուց – 3 հատ
- Թարմ խմորիչ – 150 գ
- Աղ – 1 թ/գ
- Չամիչ – 200 գ
- Ծիրանի չիր – 100 գ
- Վանիլին – 15 գ
- Կոնյակ – 2 ճ/գ
- Ալյուր – 2.5 կգ
Պատրաստման եղանակը.
1. Նախապատրաստումները սկսել երեկոյան: Դրա համար պետք է խառնել դեղնուցները, ձվերը, շաքարավազը և տաքացրած կաթը: Հետո ավելացնել խմորիչը և հալեցրած կարագը: Խառնել բաղադրիչները և թողնել 8-12 ժամ սենյակային ջերմաստիճանում:
2. Կոնյակը մի փոքր տաքացնել և թողնել 10 րոպե թրմվելու համար: Քամած կոնյակը լցնել ձվային զանգվածի մեջ աղի և վանիլինի հետ: Մաղել ալյուրը և ավելացնել մնացած բաղադրիչներին:
3. Չամիչը թրջել կոնյակով, հետո չորացնել: Չամիչը և չիրը լցնել խմորի մեջ:
4. Խմորը հունցել 15 րոպե՝ մինչև փափուկ կառուցվածք ստանալը: Հարմարության համար ձեռքերին կարելի է բուսայուղ քսել:
5. Խմորը ծածկել սննդային թաղանթով և թողնել, որպեսզի դրա ծավալը 2.5 անգամ մեծանա:
6. Խմորը տեղավորել կաղապարների մեջ (դրանց բարձրության 1/3-ի չափով) և թողնել, որպեսզի այն բարձրանա:
7. Ջեռոցը տաքացնել մինչև 200 աստիճան: Կուլիչները թխել մոտ 10 րոպե: Հետի ջերմությունն իջեցնել մինչև 180 աստիճան և թողնել ևս 25 րոպե:
8. Կուլիչները հանել ջեռոցից և թողնել 10 րոպե: Պառկեցնել կողքի վրա և ժամանակ առ ժամանակ պտտել:
9. Կուլիչների գագաթը զարդարել ջնարակով:
