Սուրբ Հարության տոնին ընդառաջ կտրուկ ավելանում են հավկիթի սպառման ծավալները, ինչի կապակցությամբ ևս մեկ անգամ ցանկանում ենք տեղեկացնել, որ համաձայն ՀՀ Կառավարության 2011 թ.-ի N 1438-ն «Ձվի և ձվամթերքի տեխնիկական կանոնակարգը հաստատելու մասին» որոշման չի թույլատրվում այն հավկիթների իրացումը, որոնք չունեն անվտանգությունը և ծագումը հաստատող փաստաթուղթ, թերի է կամ լրացած պիտանելիության ժամկետը կամ բացակայում է մակնշումը (բացառությամբ շուկաներում վաճառվող գյուղատնտեսական արտադրանք հանդիսացող հավկիթների, որոնց իրացման համար անհրաժեշտ է միայն անասնաբուժասանիտարական փորձաքննության կտրոն):
Հավկիթների մակնշման մեջ պետք է տեսանելի լինեն հավկիթի տեսակը, կարգը, արտադրության օրն ու պիտանելիության ժամկետը: Կախված հավկիթի տեսակից ու կարգից պիտանելիության ժամկետը տարբեր է. Ա դասի կամ թարմ հավկիթի «Էքստրա» տեսակի պիտանելիության ժամկետը 7 օր է, իսկ 1-ին տեսակի հավկիթներինը` 25 օր` օդի ջերմաստիճանի 00-200 C և 85-88% հարաբերական խոնավության պայմաններում:
Հավկիթի թարմությունը կարելի է որոշել ինչպես գնելիս, այնպես էլ արդեն տանը: Գնելիս պետք է ուշադրություն դարձնել վերջինիս գույնին և կճեպին: Գույնը պետք է լինի սպիտակ, եթե կաթնագույն է, դեղնավում կամ մոխրագույն, նշանակում է այն այլևս թարմ չէ: Կճեպը պետք է լինի չաղտոտված, հարթ և առանց ճաքերի: Եթե հաստ կճեպով հավկիթը արտահայտված ցան ունի, ապա վերջինս թարմ չէ: Հավկիթը չպետք է կոտրված կամ ճաքած լինի, քանի որ կճեպի ճաքերից և կոտրվածքներից մանրէները կարող են ներթափանցել հավկիթի մեջ:
Իսկ եթե արդեն գնել եք հավկիթ, սակայն այնուամենայնիվ կասկածում եք վերջինիս թարմության մեջ, ապա այն դրեք ջրով լի տարայի մեջ, եթե ընկղմվեց ջրի մեջ, ուրեմն թարմ է, եթե ոչ, ուրեմն մի օգտագործեք այն: Ինչպես նաև կարելի է պարզապես թափահարել ձուն, եթե զգացվեց շատ թույլ շարժում, ուրեմն այն թարմ է, եթե շարժման ձայն լսվեց` հավկիթը թարմ չէ: Բացի այդ կարելի է ջարդել ձուն, եթե դեղնուցը չխանվեց սպիտակուցին, ուրմեն վերջինս թարմ է:
