Երբեք օգտագործելուց առաջ մի՛ լվացեք թռչնամիսը. ԱՄՆ գիտնականներ

Գաղտնիք չէ, որ պատրաստելուց առաջ մարդկանց 90%-ը լվանում է թռչնամիսը: Հում թռչնամիսը վտանգավոր մանրէներ է պարունակում, մասնավորապես՝ կամպիլոբակտերիաներ և սալմանելլա՝ սննդային թունավորման երկու հիմնական մեղավորները: Այդ պատճառով էլ պատրաստումից առաջ թռչնամիսը լվանալը լրիվ տրամաբանական է :
Սակայն պարզվում է, որ դա ոչ մի դեպքում պետք չէ անել: Ահա թե ինչու. թռչնամսի լվացումը նպաստում է վնասակար մանրէների տարածմանը մսի ողջ մակերեսի, ինչպես նաև լվացարանի ու սեղանի վրա: Դրեկսլեի համալսարանի դասախոս Ջենիֆեր Կվինլանը մասնակցել է մի փորձարկման, որը պատվիրել էր ԱՄՆ գյուղատնտեսության նախարարությունը: Կվինլանն ասում է, որ մարդկանց 90%-ը լվանում է թռչնամիսը հենց այն ցուցումով, որը գրված է մթերքի տուփի վրա՝ «պատրաստելուց առաջ լվա և չորացրու միսը»:
Կվինլանը, սակայն, պարզաբանում է. «Դա չի ազատում մանրէներից և չի ոչնչացնում դրանք, այնինչ վտանգ է ստեղծվում մանրէների տարածման համար. սա կոչվում է աերոլիզացիա»: Եվ ահա վերջերս ԱՄՆ Գյուղնախարարությունը քարոզարշավ է սկսել «Սննդի անվտանգությունը ընտանիքում» խորագրով, որի հիմնական կետերն են.
– Պահպանե՛ք մաքրություն, հնարավորինս հաճախ լվացեք ձեր ձեռքերն ու սեղանի մակերեսը:
– Թռչնամիսն առանձին պահեք, բացառեք այլ մթերքների հետ նրա անմիջական շփումը:
– Պատրաստեք մանրակրկտորեն: Արդեն պատրաստի վիճակում թռչնամսի ներքին ջերմաստիճանն այդ պահին պիտի լինի 74 °C :
– Օգտագործելուց առաջ թռչնամիսը սառեցրեք: Դրեք այն սառցախցիկի մեջ և այդպիսով վերացրեք մսի վրա եղած մանրէների մեծ մասը:
Կվինլանի խոսքերով՝ հում թռչնամսի լվացումը իսկապես ոչ մի օգուտ չի բերում ձեր առողջությանը, այլ միանգամայն հակառակը: «Ոմանք կարծում են, թե լվանում են մանրէները, մյուսները լորձն են ուզում հեռացնել, կամ էլ կարծում են, որ միսը կեղտոտ է, իսկ մի մասն էլ դա անում է մեխանիկորեն՝ պարզապես կարծելով, որ եթե հում է, ապա լվանալ է պետք»:
Իսկ ի՞նչ է պետք անել: Պատասխանը կարճ է՝ վերցրու՛ միսն ու միանգամից պատրաստի՛ր այն: Բարձր ջերմաստիճանը վերացնում է մանրէները և ապահովում է սննդի լիարժեք անվտանգությունը:
