Պատրաստման եղանակ
- Պատրաստում ենք խմորը։
Փափկած կարագը թթվասերի հետ խառնում ենք։
- Ավելացնում ենք աղը, փխրեցուցիչը, ալյուրի մեծ մասը, և գդալով լավ հունցում ենք։
- Սեղանի վրա ենք լցնում մնացած ալյուրը, մի քիչ հունցում ենք, որպեսզի ալյուրն ամբողջությամբ խառնվի խմորին։
Խմորը փաթեթի մեջ ենք դնում և 30 րոպեով տեղափոխում սառնարանը։
- Ձվերը խաշում ենք (եռալուց հետո մոտ 10 րոպե)։ Վրան սառը ջուր ենք լցնում և սառեցնում։
- Այնուհետև ձվերը կեղևազրկում ենք և մանր կտրատում։
- Կանաչ սոխը մանր կտրատում ենք։
- Թավայի մեջ 50 գր կարագ եք լցնում և հալեցնում։
- Լցնում ենք կանաչ սոխը. խառնում ենք։
- Աղ և պղպեղ ենք անում, ավելացնում ենք կտրատած ձվերը և խառնում ենք։
- Միջուկը պետք է սովորականից մի փոքր աղի լինի։ Փորձում ենք և անհրաժեշտության դեպքում աղ ավելացնում։
- Խմորը 2 մասի ենք բաժանում։
Խմորի մի կեսը 25 սմ տրամագծով շրջանաձև գրտնակում ենք (մոտավոր 1 սմ հաստությամբ խմոր է լինելու)։
- Խմորը փաթաթում ենք գրտնակի վրա և տեղափոխում յուղաթղթով պատված տապակի մեջ։
- Վրան ենք լցնում միջուկը` եզրից մի քանի սանտիմետր դեպի ներս, հավասարեցնում ենք։ Միջուկի վրան ենք շարում բարակ շերտերով կտրատած 50 գր կարագը։
- Խմորի մյուս կեսը գրտնակում ենք, բայց տրամագիծը նախորդից 1-2 սմ -ով ավելի պետք է լինի։ Այնուհետև գրտնակած խմորով միջուկը ծածկում ենք ։
- Խմորի եզրերը դեպի վերև ենք ծալում,մակերեսին պատառաքաղով ծակծկում ենք։
- Դեղնուցի վրա 1 թ/գդ ջուր ենք լցնում, խառնում և քսում կարկանդակի մակերեսին։
Տեղափոխում ենք մինչև 200 աստիճան տաքացրած ջեռոցի մեջ։ Թխում ենք 30-40 րոպե։
- Պատրաստի կարկանդակը պետք է հաճելի ոսկեգույն երանգ ունենա։
- Համեղ է, թե սառը, և թե տաք վիճակում։
