Եվ միայն կերակրի սոդայի օգտագործումից հետո է բիսկվիթը ստացել ներկայիս օդեղեն և սպունգանման տեսքը:

  • Սոդան կարելի է օգտագործել ինչպես նախնական վիճակում, այնպես էլ հանգցված (մարված):
  • Սոդան հանգցնելու համար հիմնականում օգտագործվում է կիտրոնի հյութ, ցանկացած այլ ցիտրուսի հյութ, ինչպես նաև բարձրորակ քացախ:
  • Եթե խմորը պարունակում է թթվասեր, կաթ, մածուն, յոգուրտ կամ սերուցք, ապա պատք չէ սոդան հանգցնել:
  • Եթե խմորը չի պարունակում որևէ թթու բաղադրիչ կամ կաթնամթերք, ապա սոդան հանգցնում ենք թթվային միջավայրում: Ամենաավանդական չափաբաժիններն են՝ 1 թ.գ. սոդա, 1 ճ.գ. կիտրոնահյութ կամ քացախ:

  • Առավելագույն փխրուն կառուցվածք ստանալու համար սոդան ավելացնում ենք խմորին անմիջապես ջեռոցը դնելուց առաջ, քանի որ խմորեղենը բարձրանում է սոդայի և թթվային բաղադրիչի ռեակցիայի արդյունքում: Եթե այդ ռեակցիան ավարտված լինի մինչև խմորը ջեռոց տեղափոխելը, ապա խմորեղենը համարյա չի բարձրանա:
  • Սոդայի մեծ քանակությունը բացասաբար է ազդում համի վրա, ուստի այն պետք է չափավոր օգտագործել:
