Ակրիլամիդի վնասակար ազդեցության մասին վաղուց է հայտնի: Դեռեւս 2002 թվականին Ստոքհոլմի համալսարանի գիտնականներն ապշեցնող բացահայտում են արել. մինչ այս քիչ թվով քիմիկոսներին հայտնի եւ պլաստմասի, սոսնձի եւ ներկերի արտադրության մեջ կիրառվող ակրիլամիդը, որը նաեւ առկա էր ծխախոտի ծխի մեջ եւ շատ թունավոր էր, դրա փոքր չափաբաժինը բավական էր, որպեսզի առնետների մոտ քաղցկեղի առաջացման պատճառ դառնար: Այս ակրիլամիդը շուտով հայտնաբերվեց միլիոնավոր մարդկանց սննդի օրական չափաբաժնում:
Մասնավորապես, ակրիլամիդը հայտնվում է ածխաջրածին պարունակող մթերքների մեջ, որոնք «սեւացնող ռեակցիայով» ջերմային մշակում են ստանում, որի ժամանակ փոխվում է հոտը, գույնն ու մթերքի կառուցվածքը: Ակրիլամիդ կա սուրճի, կարտոֆիլի ֆրիի, չիփսերի, վարսակի փաթիլների, կրեկերների, հացի եւ նույնիսկ բլիթների ու դոնաթների մեջ: Այս բոլոր մթերքների մեջ առկա է ասպարգին ամինաթթու, որը 125 աստիճանից բարձր ջերմաստիճանի դեպքում ակրիլամիդ է դառնում: Հետաքրքիր է, որ այն առաջանում է հենց տապակելու դեպքում, մինչդեռ եփած եւ շոգեխաշած մթերքներն անվնաս են մնում:
Անցյալ տարի դանիական գիտնականներին հաջողվել էր ապացուցել, որ կանայք, ովքեր երկու անգամ ավելի շատ են օգտագործում վերը նշված մթերքները, երկու անգամ ավելի շատ են հիվանդանում կրծքագեղձի քաղցկեղով, քան առողջ սնունդ նախընտրողները:
Իսկ փաստը, որ գիտնականները փորձում են դատական գործընթացի միջոցով սահմանափակել ակրիլամիդի տարածումը, միայն հաստատում է, որ այն վնասակար է եւ դրա դեմ պետք է քայլեր ձեռնարկել:
