Քաղցրահամ ջուրը սառույց է դառնում 00 С ջերմաստիճանում:

Իրականում այդպես չէ: Քաղցրահամ ջուրը, ինչպես և աղի ջուրը, О0 С ջերմաստիճանի պայմաններում սառույց չի դառնում, եթե չկան այդ գործընթացին նպաստող պայմաններ:

 

Որպեսզի ջուրը սառչի, նրա մոլեկուլներին պետք է ինչ-որ բաներ կպնեն: Սառույցի բյուրեղները առաջանում են ինչ–որ «կորիզների շուրջ», օրինակ՝ փոշու մասնիկների: Եթե ջուրը այնքան մաքուր է, որ դրանք չկան, ապա կարելի է սառեցնել այն մինչև –420 C ջերմաստիճանի պայմաններում և միայն դրանից հետո կսկսի առաջանալ սառույց: Սա կարելի է կատարել անգամ տնային պայմաններում. գործընթացը կոչվում է ջրի «գերսառեցում»: Այն կատարվում է առանց շտապելու: Վերցնում եք շատ մաքուր ջրի շիշ և դնում սառցարանում: Ջուրը կսառի, բայց սառույց չի առաջանա: Սակայն բավական է սառցարանից հանեք շիշը և մատով «կտտացնեք», այն անմիջապես սառույցի կվերածվի:

 

Աղերի մեծ պարունակության պատճառով ծովի ջուրը կարող է ունենալ О0 С–ից ցածր ջերմաստիճան, բայց սառույցի չվերածվել: Ձկների արյունը սառում է –0,50 C–ի պայմաններում: Անտարկտիդյան սառը ջրերում ապրող ձկները սառույցի չեն վերածվում այն պատճառով, որ նրանց ենթաստամոքսային գեղձում արտադրվում է հատուկ սպիտակուց, որն անցնելով արյան մեջ՝ թույլ չի տալիս սառույցի բյուրեղացման կորիզների առաջացում (ինչպես անտիֆրիզը ռադիատորի մեջ):

Պարզվում է նաև, որ ջրի եռման ջերմաստիճանը (անգամ նորմալ ճնշման տակ) պարտադիր չէ, որ լինի 1000 C : Այն կարող է լինել դրանից բարձր: Այստեղ ևս ջուրը պետք է տաքացնել աստիճանաբար, ընդ որում՝ այնպիսի տարայի մեջ, որ այն չունենա քերծվածքներ: Քերծվածքներում մնում են այն փոքրիկ օդային խոռոչները, որոնց պատճառով էլ հենց առաջանում են առաջին գոլորշու պղպջակները և ջուրը սկսում է եռալ:

Եվս մի հետաքրքիր փաստ: Տաք ջուրը ավելի արագ է սառույցի վերածվում , քան սառը ջուրը: Ո՞րն է դրա գաղտնիքը, մինչև այժմ անհայտ է: Այդ մասին գրել է դեռ Արիստոտելը մեր թվարկությունից առաջ, և պատկերացրեք՝ գիտական աշխարհը դա ընդունել է միայն 1963 թվականին՝ շնորհիվ մի պաղպաղակասեր երեխայի: Տանզանցի աշակերտ Էռնեստո Մպեբան իր կամքի և նպատակաուղղվածության շնորհիվ ապացուցեց հին հույն փիլիսոփայի այդ դիտարկումը: Նա առարկայական ցույց տվեց գիտնականներին, որ քաղցրացրած կաթնային խառնուրդը պաղպաղակի է վերածվում ավելի արագ, եթե այն սկզբից տաքացվի: 

Տեսնո՞ւմ եք՝ ինչ օգուտներ է տալիս աղքատությունը. երեխան փող չի ունեցել , ինքն է իր համար պաղպաղակ պատրաստել և գյուտ արել: Իսկ մենք ուզում ենք ամբողջությամբ վերացնել աղքատությունը: Չի կարելի, չէ...
