Շամպայնը գավաթի մեջ փրփրում է ածխաթթու գազի անջատվելու պատճառով:
Իրականում այնքան էլ այդպես չէ:
Իհարկե, առանց ածխաթթու գազի շամպայնը չի փրփրի, բայց միայն ածխաթթու գազով ևս դա չի ստացվի: Իրականում շամպայնը գավաթի մեջ փրփրում է կեղտի պատճառով: Իդեալական հարթ և իդեալական մաքուր գավաթում շամպայնը չի փրփրի, քանի որ ածխաթթու գազի մոլեկուլները ցնդում են աստիճանաբար: Ածխաթթու գազը շամպայնի շշի ներսում գտնվում է մանր պղպջակների ձևով: Ցանկացած միջին վիճակագրական շամպայնի շշում լինում են ածխաթթու գազի ավելի քան 250 միլիոն պղպջակներ: Ըստ ֆիզիկայի օրենքների, շամպայնի շիշը բացելիս ածխաթթու գազի պղպջակը պետք է դուրս գա, քանի որ շշի ներսում ճնշումը բարձր է: Բայց այդ գազի մոլեկուլները ավելի ծանր են ջրի մոլեկուլներից, և նրանց պետք է լրացուցիչ ազդակ, որ բարձրանան վերև: Ըստ Լապլասի օրենքի, ածխաթթու գազի պղպջակի ներսում ճնշումը աճում է և պղպջակը մեծանում է, և եթե նրան ոչինչ կողքից չի օգնում, այն մակերևույթ չի բարձրանում, այլ ճնշվում է և մնում հեղուկի մեջ: Իսկ եթե պղպջակը միանում է այլ նյութի հետ, մակերևույթ է բարձրանում և փրփուր առաջացնում: Այդ խթանող նյութերը շշի կամ գավաթի վրա գտնվող միկրոսկոպիկ կեղտերն է՝ փոշին, մազմզուկները և այլ մնացորդները: Այս միկրոմասնիկները այնքան մանր են, որ ջուրը նրանց նույնիսկ չի թրջում, իսկ ածխաթթվի պղպջակները հավաքվում են նրանց շուրջ, առաջանում է կոնդենսացիայի կորիզ, պղպջակները աճում են և բարձրանում վերև: Նույն էֆեկտը, ի դեպ, ունեն նաև շշի կամ գավաթի մանր, երբեմն անտեսանելի քերծվածքներն ու խազերը: Սակայն ժամանակակից լուսանկարչական մեթոդներով պարզվել է, որ շամպայնի փրփրելու գործում որոշիչ է կեղտը: Նույն երևույթը կատարվում է նաև գարեջրի դեպքում: Ի դեպ, օրինակ, աղի միջոցով, որի բյուրեղները հանդես են գալիս որպես կոնդենսացիայի կորիզ, պղպջակներից ազատվելը բերում է նրան, որ մարդն ավելի ուշ է արբում (պղպջակներով հարուստ ըմպելիք խմելիս պղպջակները նպաստում են ալկոհոլի արագ յուրացմանը օրգանիզմի կողմից և, բնականաբար, արագ արբելուն): Ի դեպ, խորհուրդ է տրվում լավ լվացված գավաթը շամպայնով կամ գարեջրով լցնելուց անմիջապես առաջ ողողել մաքուր ջրով, այս դեպքում պղպջակներն ու փրփուրը քիչ կլինեն: Այս գործողությունը կատարում են որոշ բարձրակարգ ռեստորաններում:
Պարզվում է, որ ցանկացած ռեստորանում պատվիրելով շամպայն՝ կարելի է կարծիք կազմել այդ հաստատության սանիտարահիգիենիկ վիճակի մասին: Եթե գավաթում փրփուրը շատ է, նշանակում է ամանեղենը նորմալ չի լվացվում: Հետո էլ, երբ նկատում ես, թե ինչ կեղտոտ գավաթից ես խմում շամպայնը, հնարավոր է, որ զզվես և թողնես խմելը: Բայց այստեղ մի հանգամանք էլ կա, որը կարող է այլ վտանգավոր սովորությունների պատճառ դառնալ: Օրինակ՝ օղի խմելը. կթողնես շամպայնը և կսկսես օղի խմել, քանի որ օղին գավաթի մեջ երբեք չի փրփրում, եթե անգամ գավաթն ընդհանրապես լվացած չէ: Թեպետ, օղիով դժվար թե, ասենք, ռոմանտիկ երեկո կազմակերպես...
