Բրինձը անխոս շատ համեղ և օգտակար մթերք է, սակայն բրնձի հետ պետք է շատ զգույշ լինել, այն կարող է սննդային թունավորում առաջացնել:
Դա կապված է այն բանի հետ, որ բրինձը պարունակում է բակտերիալ շղթաներ, որոնք կարող են առաջացնել թունավորում: Այդ բակտերիան կայուն է մնում նաև եռման ջերմաստիճանում: Այդ իսկ պատճառով, եթե պատրաստված բրինձն ամբողջությամբ չեք կերել, ապա մնացած բրնձի մեջ սկսվում է վնասակար օրգանիզմների բազմացման գործընթացը, և բավականին արագ, քան թվում է: Ահա, թե ինչու նախորդ օրը պատրաստված բրինձը հաճախ առաջացնում է փորլուծություն, փսխում և մարսողության հետ այլ խնդիրներ:
Սակայն չի նշանակում, որ պետք է ընդհանրապես հրաժարվել բրնձից: Փորձագետներն ասում են որ բրինձը սառնարանում չի կարելի է պահել 24 ժամից ավել:
Հիշեցում. եթե եփված բրինձը մնացել է սենյակային ջերմաստիճանում մեկ ժամից ավել, ապա այն արդեն վտանգավոր է: Ասվածը վերաբերում է բրնձից պատրաստված բոլոր ուտեստներին:
