«Փաստ» օրաթերթը գրում է

Մինչև 16-րդ դարը գարեջուրը սովորաբար եփվում էր ցանկացած հացահատիկային կուլտուրայից, որն աճում էր որոշակի տարածքում: Միջնադարում գարեջրագործության մեջ տարեկանի օգտագործումից սկսել են հրաժարվել, քանի որ կառավարիչները իրավացիորեն կարծում էին, որ որոշ հացահատիկային կուլտուրաներ (ցորեն և տարեկան) ավելի լավ է ծախսել հաց արտադրելու համար: Հաճախ նման արգելքներ սկսել են գործել սովի տարիներին: Ֆեոդալները հավատում էին, որ մարդիկ կարող են հասնել անգամ նրան, որ սովից կուռչեն, բայց չեն հրաժարվի արբեցնող այդ խմիչքից։ Ի դեպ, նման պատճառաբանությունն է հանդիսացել գարեջրի մաքրության մասին օրենքի ընդունման հիմքերից մեկը, որն ուժի մեջ է մտել 1516 թվականին:

Այդ ժամանակվանից տարեկանը սկսել են օգտագործել հաց թխելու համար, իսկ գարին՝ գարեջուր պատրաստելու համար։ Ցորենն իր հերթին օգտագործվել է ավելի բարձրորակ հաց ու գարեջուր պատրաստելու համար, իհարկե, ոչ շարքային մարդկանց համար: Տարեկանն առանձնապես պահանջկոտ չէ, և նույնիսկ ամենաաղքատ հողերում կարելի է ինչ-որ քանակի բերք ստանալ: Փաստացի, Եվրոպայում միայն երկու ժողովուրդ են ստեղծել ազգային խմիչք տարեկանի հիման վրա՝ ռուսական կվասը և ֆիննական սահտին: 1516 թվականից հետո մնացած Եվրոպայում տարեկանի գարեջուրը դարձել է ընդունված կանոններից հազվադեպ բացառություն: Բայց պետք է ընդգծել, որ դա շատ համեղ բացառություն է: Այսօր տարեկանը չի հանդիսանում «գարեջրային» հացահատիկ, և արտադրվում է տարեկանից պատրաստված ընդամենը մի քանի տեսակի խմիչք, որոնցից ամենատարածվածն էլ Munich Paulaner գարեջրագործական ընկերության արտադրած Ռոգգենբիրն է։

Այն ունի 5,3 % սպիրտայնություն և տարբերվում է գարեջրի մյուս տեսակներից նրանով, որ այնքան էլ չոր չէ և ունի քաղցրահամ հետհամ։ Ռոգգենբիրը գարեջրի այն տեսակներից է, որոնք հայտնվել են միջնադարում։ Ավանդաբար այն պատրաստվում է գարու, ցորենի և տարեկանի ածիկից՝ համապատասխանաբար 1։2։2 հարաբերակցությամբ։ Մեր օրերում տարեկանի գարեջուրը պատրաստվում է երկու տարբերակով՝ էլի և լագի։ Նման գարեջրի ժամանակակից տեսակներում ալկոհոլի պարունակությունը տատանվում է 5-5,5 %-ի սահմաններում։ Շնորհիվ այն բանի, որ Ռոգգենբիրին ավելացվում է գայլուկի բավականին փոքր քանակություն, ածիկի բույրն է մնում գերիշխող։ Բացի այդ, հաճախ այդ գարեջրերը զտվում են, ինչը միայն յուրահատկություն է հաղորդում խմիչքին:

Քանի որ այս գարեջրի բաղադրատոմսը ձևավորվել է դեռևս միջնադարում, միանգամայն ընդունելի է գարեջրի մեջ թեթև հողային հոտի առկայությունը, որը նման է տարեկանի հացի հոտին: Ընդհանուր առմամբ, Ռոգգենբիրն ունի հիշվող համ ու բույր։ Առաջին բանը, որը կարելի է ընկալել, թեթև մրգային բույրն է: Այնուհետև հստակորեն զգացվում է տարեկանի հացի բույրը և հետհամը, և, ինչպես պետք է լինի տարեկանի գարեջրի դեպքում, զգացվում է «ապխտվածության» թեթև համ։
