«Մզված արքայախնձոր». կոկտեյլ, որում միայն արքայախնձոր չէ. «Փաստ»
ՀԱՆՐԱՀԱՅՏ ՄՈԼՈՐՈՒԹՅՈՒՆՆԵՐ
«Փաստ» օրաթերթը գրում է
«Պինա կոլադա» կոկտեյլը հայտնի է ամբողջ աշխարհում: Pina Colada թարգմանաբար նշանակում է «մզված արքայախնձոր»: Սկզբնապես դա ոչ ալկոհոլային խմիչք է եղել, որը պարունակել է միայն մզված արքայախնձորի հյութ: Առաջին անգամ «Պինա Կոլադա» ալկոհոլային կոկտեյլի բաղադրատոմսը տպագրվել է 1922 թվականին «TRAVEL» ամսագրում: Այդ ժամանակվա ըմպելիքը տարբերվել է ժամանակակից կոկտեյլից ոչ միայն կազմով, այլ նաև պատրաստման եղանակով: «Պինա Կոլադա» կոկտեյլի բաղադրատոմսը ներառել է արքայախնձորի և լայմի հյութ, ռոմ և շաքար: Այդ բաղադրությունը անփոփոխ է մնացել մինչև 1954 թվականը:
1954 թվականին Պուերտո Ռիկոյում գտնվող «Hilto» հյուրանոցի բարմեն Ռամոն Մարերրոն է աշխատել այդ կոկտեյլի բաղադրատոմսի բարելավման ուղղությամբ: Սկզբնապես նոր կոկտեյլը ստացել էր «Պինյա կոլադա» անվանումը, բայց այն չի արմատացել: Բացի դա, հենց նույն ժամանակ «Old San Juan» սրճարանի բարմենն է հայտարարել կոկտեյլի բաղադրատոմսի իր հեղինակային իրավունքի մասին: Ներկայումս նշանակություն չունի, թե ով է գտել այդ նոր բաղադրատոմսը: Հայտնի է միայն, որ այդ ժամանակներից ի վեր այդ կոկտեյլը դարձել է Պուերտո Ռիկոյի հպարտությունը «Պինա Կոլադա» անվանմամբ: Անգամ 1978 թվականին այն հայտարարվել է Պուերտո Ռիկոյի ազգային ըմպելիք: «Պինա Կոլադա» կոկտեյլը IBA- ի ծածկագիր է ստացել 1961 թվականին: Այդ կոկտեյլի ժողովրդականությունն աճել է Ռուպերտ Հոլմսի «The Pina Colada Song» երգի շնորհիվ, որը գլխավորել է ամերիկյան հիթշքերթները 1979 և 1980 թվականներին: ԱՄՆ-ում հուլիսի 10-ը սկսել են նշել որպես «Պինա Կոլադա» կոկտեյլի ազգային օր: Ջազի լեգենդ և ֆլուգելիստ Չակ Մանջոնը 1979 թվականին լույս տեսած իր «Fun and Games» ալբոմում թողարկել է «Պինա Կոլադա» կոչվող մեղեդին, որը ևս հանրաճանաչություն է բերել կոկտեյլին:
Այդ ժամանակ «Պինա Կոլադա» կոկտեյլը պարունակել է այնպիսի բաղադրիչներ, ինչպիսիք են կոկոսի կաթը, արքայախնձորի հյութը, սպիտակ ռոմը և մանրացված սառույցը: Այս կոկտեյլը մատուցում են «փոթորիկ» կամ հայբոլ բաժակներով, բացի դա, լողափներում հաճախակի «Պինա Կոլադան» մատուցվում է կոկոսի կճեպով: Մեր ժամանակներում շատ հաճախ կոկոսի կաթը փոխարինվում է կոկոսի լիկյորով, ինչի արդյունքում խմիչքն ավելի քաղցր է դառնում, բայց համային հատկությունները վատանում են, կոկտեյլը արդեն չի լինում այնպես փափուկ, որքան նախնական տարբերակում: «Պինա Կոլադա» կոկտեյլի բաղադրատոմսը շատ պարզ է՝ 50 մլ թեթև ռոմ, 30 մլ կոկոսի կաթ, 50 մլ արքայախնձորի հյութ: Բաղադրիչները խառնում են բլենդերով մանրացված սառույցի հետ միասին (խառնուրդի մեթոդ) և մատուցում խոշոր բաժակներով՝ ծղոտով և արքայախնձորի կտորով և կոկտեյլային բալով զարդարված: Ներկայումս այս ըմպելիքի պատրաստման բազմաթիվ բաղադրատոմսեր գոյություն ունեն:
Օրինակ՝ ոչ ալկոհոլային-բացակայում է ռոմը, Չի Չի - ռոմի փոխարեն օգտագործվում է օղի, Բայյա-ավելացվում է սերուցք, Լավայի հոսք-խառնում են Պինա կոլադան և ելակային Դայկարին, Ամերտտոկոլադա-խառնում են բաց գույնի ռոմ, ամարետտո լիկյոր, կոկոսի սերուցք, արքայախնձորի հյութ, Խնձորային, Դդմային, Ելակային և այլն- արքայախնձորի հյութի փոխարեն օգտագործում են համապատասխան այլ մրգերի հյութեր, Բանանայինավելացվում է թարմ բանան, սերուցք և շաքարի օշարակ:
