«Ես ինձ հաջողակ համարեցի, երբ վերադարձա հայրենի գյուղ և հիմնեցի առաջին բիզնեսը». շեֆ խոհարար Յուրա Սարգսյան
SOCIETYՇեֆ խոհարար Յուրա Սարգսյանը Գեղարքունիքի մարզի Ծաղկունք համայնքից է, որն արդեն հայտնի է գաստրոտուրիզմով։ Յուրան այստեղ հիմել է երկու հյուրատուն-ռեստորան, որտեղ աշխարհի տարբեր կողմերից գալիս են փորձելու վերջինիս պատրաստած ուտեստները։
Յուրան ռեստորանային գործում է արդեն 26 տարի. սկզբում աշխատել է խոհարարի օգնական, հետո մեկնել է երկրից, վարպետացել, բայց կրկին վերադարձել հայրենի գյուղ՝ Ծաղկունք։
Հյուրատուն-ռեստորաններից մեկը Յուրան անվանել է «Խոհարարի տուն»։ Այն ունի հատուկ առաքելություն՝ զարգացնել հայկական խոհարարական ավանդույթները։ Հայ խոհարարները գալու են այստեղ՝ ճաշացանկում ավելացնելու իրենց հեղինակային և անվանական ուտեստները։
«Խոհարարի տուն» հյուրատուն-ռեստորանը Ակբա Ֆեդերացիայի և Գերմանիայի բնության պահպանության միության (NABU-ի) «Գյուղական տուրիզմի զարգացման ծրագրի» շահառուներից է։ Տրամադրված դրամաշնորհի միջոցով Յուրան ավարտել է շինարարությունն ու կահավորել տարածքը։
Հյուրատան աշխատանքներին մասնակցություն ունի Յուրայի ամբողջ ընտանիքը. որդիներից մեկը նկարում ու զարդարում է հյուրատան պատերը, մայրը՝ համեղ պահածոներ է պատրաստում, կինը՝ ղեկավարում։
«16 տարի թողել էի Ծաղկունքն ու հետ եմ եկել, ինձ թվում է՝ էլ չեմ թողնի։ Խոհարարությունն իմ հոբբին է, իմ երազանքը։ Ես ինձ հաջողակ համարեցի, երբ վերադարձա հայրենի գյուղ և հիմնեցի առաջին բիզնեսը։ Կապ չունի՝ ֆինանսական եկամուտը մե՞ծ է, թե՝ փոքր։ Եթե չես մտածում ֆինանսականի մասին ու զբաղվում ես քո սիրած գործով, ուրեմն՝ կհաջողես։ Գյուղական տուրիզմի զարգացման մասով ծրագիր կար. դիմեցի ու 300 հոգուց անցա ես, իմ մտահաղացումները։ Շնորհակալություն Ակբա բանկին ու NABU-ին։ Ֆինանսական աջակցություն ենք ստացել անհատույց, ինչը շատ օգնեց»,- նշում է շեֆ խոհարար Յուրա Սարգսյանը։
Յուրան նաև իր վարպետությունն է փոխանցում սկսնակներին. ունի բազմաթիվ աշակերտներ Հայաստանի տարբեր շրջաններից։ Ամենակարևորը՝ աշակերտներին սովորեցնում է պատրաստել ի սրտե, մեծ հոգով և այնպես, ինչպես ընտանիքի համար։
