Ինչո՞ւ է քաղցրն այդքան հաճելի, և ինչո՞ւ ենք մենք այն այդքան ուժգին տենչում։ Գիտնականները, հավանաբար, վերջապես ստացել են պատասխանը։

Գիտնականներն առաջին անգամ պարզել են քաղցրի ընկալիչի կառուցվածքը՝ լեզվի փոքրիկ հատվածը, որն ուղեղին հաղորդում է, թե ինչ-որ բան քաղցր համ ունի։ Հետազոտությունը, որի արդյունքները հրապարակվել են Cell ամսագրում, կարող է օգնել սննդի ընկերություններին արտադրել քաղցր մթերքներ՝ շաքարի ավելի քիչ պարունակությամբ։

«Բացահայտելով քաղցրի ընկալիչի կառուցվածքը՝ մենք գիտելիք ենք ստանում մոլեկուլային մեխանիզմների մասին, որոնք կառավարում են, թե ինչպես ենք մենք զգում քաղցրությունը, և այն մասին, թե ինչպես մեկ ընկալիչը կարող է ճանաչել քաղցր համ ունեցող մոլեկուլների այդքան լայն շրջանակ», - ասել է հետազոտության համահեղինակ Չժան Ցզյուենը։

2001 թվականին գիտնականները հայտնաբերել են գեներ, որոնք վերահսկում են քաղցրի ընկալիչը։ Այժմ նրանք պարզել են, թե ինչպիսի տեսք այն ունի և ինչպես է աշխատում։ Այս տեղեկատվությունն ունենալով՝ սննդի ընկերությունները, հավանաբար, այլևս արհեստական քաղցրացուցիչների կարիք չեն ունենա։

Փոխարենը նրանք կարող են օգտագործել ավելի քիչ շաքար և ավելացնել բաղադրիչներ, որոնք ուժեղացնում են քաղցրի ընկալիչների աշխատանքը։ Սա նշանակում է, որ մարդիկ կկարողանան վայելել նույն քաղցր համը, բայց ավելի քիչ կալորիա ստանալ։

«Այս հայտնագործությունը հսկայական օգուտ կբերի քաղցրի նկատմամբ մեր ուժեղ պահանջի դեմ պայքարում և թույլ կտա մշակել քաղցրի ընկալիչների ռացիոնալ մոդուլյատորներ, որոնք, իրենց հերթին, կարող են օգնել նվազեցնել ճարպակալման, շաքարախտի և սիրտ-անոթային հիվանդությունների տարածվածությունը», - պարզաբանել է Ցզյուենը։

Վերջին 20 տարվա ընթացքում լաբորատորիան ուսումնասիրել է, թե ինչպես է աշխատում համը՝ լեզվից մինչև ուղեղ։ Նրանք նաև ուսումնասիրել են, թե ինչպես է ուղեղը վերահսկում քաղցի զգացումը և սննդի նկատմամբ տենչը։ Գիտնականների թիմի նախորդ հետազոտություններից մեկը ցույց է տվել, որ թափառող նյարդը, որը միացնում է աղիքներն ու ուղեղը, մեծ դեր է խաղում այն հարցում, թե ինչու ենք մենք տենչ զգում ճարպի և շաքարի հանդեպ։
