«Փաստ» օրաթերթը գրում է.

Ներկայում Բուլղարիայում խաղողի այգիները զբաղեցնում են մոտ 100 000 հեկտար, ու թեև թանկարժեք գինիների գիտակներն ինչքան էլ փորձեն, բայց չեն կարող հիշել այդ տարածաշրջանի գինու ոչ մի անուն, տեղական խմիչքները վստահորեն պահպանում են իրենց դիրքերը էժան գինիների շարքում և չեն պատրաստվում զիջել դիրքերը:

Բուլղարական գինիների պատմությունն աշխարհում ամենահներից մեկն է, քանի որ խաղողն այնտեղ աճել է դեռ քարե դարում, և հաստատապես նաև հայտնի է, որ այնտեղ գինեգործությունը սկսել են թրակացիները, ապա՝ շարունակել հույները, իսկ ավելի ուշ՝ հռոմեացիները: Այդ մասին են վկայում բազմաթիվ ամֆորաները, գինեգործական գործարանների մնացորդները և այլ հնագիտական գտածոները: Երբ սլավոններն ու նախաբուլղարացիները սկսեցին բնակություն հաստատել Բալկանյան թերակղզում, այնտեղ ամենուր արդեն խաղողի այգիներ էին, և կային նաև գինեգործներ։ Նրանք արագ որդեգրեցին գինու արհեստի գաղտնիքները, և գինեգործությունը դարձավ նրանց առօրյայի կարևոր բաղադրիչներից մեկը:

Երբ այդ հողերը պատկանում էին Բյուզանդական Կայսրությանը, որակը բարելավելու նպատակով գինին սկսեցին պահեստավորել և շշալցնել ընդարձակ նկուղներում, որպեսզի լինի խմորման ավելի ցածր և կայուն ջերմաստիճան։ Այդ ժամանակներից ի վեր ստեղծվել են ամֆորաները՝ արտադրողների «ապրանքանիշերով», արտադրության վայրով և բերքահավաքի տարեթվով։

Հետաքրքիր է, որ բուլղարական գինեգործությունը ստիպված է եղել երկու լուրջ հարվածի պայմաններում գոյատևել, երբ այն արգելվել է: Առաջին անգամ դա տեղի է ունեցել 9-րդ դարում խան Կրումի օրոք: Նա ծայրահեղ բացասական վերաբերմունք ուներ ոգելից խմիչքների օգտագործման նկատմամբ, վստահ էր, որ բնակչության հարբեցողությունը կհանգեցնի պետության կործանմանը, ուստի պատժում էր ոգելից խմիչքներ օգտագործելու համար և նաև հրամայել էր հատել խաղողի այգիների մեծ մասը։ Սակայն նրա մահից հետո ամեն ինչ վերադարձավ իր բնականոն հուն։

Բուլղարիայի գինեգործության համար երկրորդ տխուր շրջանն այն ժամանակն էր, երբ երկիրը գտնվում էր Օսմանյան կայսրության կրնկի տակ: Ինչպես հայտնի է, իսլամն արգելում է ալկոհոլը, իսկ խաղողը սննդի համար օգտագործվում է միայն թարմ կամ չորացրած վիճակում։ Ուստի, երկար տարիներ բուլղար գյուղացիները գինի էին պատրաստում միայն իրենց համար և քիչ քանակությամբ։ Անկախություն ձեռք բերելով՝ երկիրն սկսեց զարգացնել արդյունաբերության լայն տեսականի, նաև գինեգործությունը զարգանալու նոր հնարավորություններ ստացավ։

Երկրորդ համաշխարհային պատերազմից հետո Բուլղարիան սկսեց ամբողջ Եվրոպային մատակարարել լավ ու էժան գինիներ: Երբ 1990-ականներին Բուլղարիան բռնեց զարգացման կապիտալիստական ուղին, գինեգործական գործարանները դարձան մասնավոր և զգալիորեն արդիականացվեցին: Այժմ բուլղարական գինիներ կարելի է գտնել աշխարհի ցանկացած խանութում, իսկ դրանցից մի քանիսը շատ տարածված են, օրինակ Debut Fume-ը և Magorud-ը:
