Ինչո՞ւ էին հին հույները գինուն ջուր խառնում. «Փաստ»
ՀԱՆՐԱՀԱՅՏ ՄՈԼՈՐՈՒԹՅՈՒՆՆԵՐ
«Փաստ» օրաթերթը գրում է.
Հունաստանը համարվում է եվրոպական գինեգործության ծննդավայրը։ Հենց այդ երկրում են առաջին անգամ սովորել գինի պատրաստել։ Մ.թ.ա. 5-րդ դարից մինչև մեր օրերը գինին եղել և մնում է հույների հպարտության աղբյուրը։ Սկզբում հին հույները մաքուր գինի չէին խմում, այն նոսրացնում էին ջրով։ Փաստն այն է, որ այդ ժամանակ արտադրվող ալկոհոլային խմիչքը շատ խիտ էր։ Սակայն որոշ պատմաբաններ կարծում են, որ գինին ջրով նոսրացնելով՝ հույները ախտահանում էին ջրհորի ջուրը։ Բացի դա, մասնագետների մեծ մասը դեռևս հակված է այն տարբերակին, որ հունական գինին շատ քաղցրահամ էր, ուստի դժվար էր այն խմել չնոսրացված վիճակում։ Հին հույները «աստվածների խմիչքն» առանց նոսրացնելու խմելը համարում էին անարգանք աստվածների նկատմամբ, ուստի սկյութներն ու չինացիները նրանց աչքում հարբեցողներ և տգետներ էին, քանի որ նրանք գինին նոսրացնելու սովորություն չունեին։
Հունական գինիների համը պայմանավորված էր հատուկ կլիմայով։ Ավելին, երկրի տարբեր մասերում աճող խաղողը գինուն հաղորդում է որոշակի նուրբ համ։ Հունական կղզիներում արտադրում էին մեկ գինի, իսկ հունական գաղութներում, օրինակ՝ Խերսոնեսոսում, բոլորովին այլ։ Փաստն այն է, որ յուրաքանչյուր տարածք ուներ իր առանձնահատուկ հողը, միկրոկլիման և խաղողի տեսակները։ Ի դեպ, դրանցից մի քանիսը պահպանվել են մինչ օրս, իսկ մի քանիսը դարձել են ժամանակակից խաղողի տեսակների նախնիները։
Ամենահայտնի և զուտ հունական ալկոհոլային խմիչք էր «Ռեցինա» գինին։ Այն ունի հետաքրքիր բույր և խեժային համ։ Այս համային բնութագրերը պայմանավորված են խմիչքի մեջ փշատերև ծառերի խեժի առկայությամբ։ Սկզբում հին հույները խեժը հատուկ չէին ավելացնում խմիչքին, այլ դրանով փակում էին անոթները։ Սակայն շատ ավելի ուշ սոճու խեժը դարձավ մի տեսակ այնպիսի պահպանիչ, որը կանխում է գինու թթվայնացումը։
«Ռեցինան» հիմա էլ հունական խնջույքի անբաժանելի ատրիբուտ է, բայց այժմ խեժը ավելացվում է այդ խմիչքին դրա խմորման փուլում։ Դրա մեջ ալկոհոլի պարունակությունը կազմում է 11,5 %։ Այդ խմիչքը պատրաստվում է էժան և ամենատարածված խաղողի տեսակներից, ուստի դրա գինը հասանելի է գրեթե յուրաքանչյուր հույնի համար։ Այնուամենայնիվ, որոշ անբարեխիղճ արտադրողներ փորձում են թաքցնել էլ ավելի էժան գինու իրական համը՝ դրան ավելացնելով խեժ։
