Իդեալական «բլինչիկ»-ի գաղտնի բաղադրատոմսը

Բլինչիկը պարզ ու ծանոթ ուտեստ է, սակայն հենց դրա պարզության մեջ էլ թաքնված է կատարելության գաղտնիքը։ Առաջին հայացքից նույն բաղադրիչներով պատրաստված բլինչիկները հաճախ ստացվում են տարբեր՝ մեկի մոտ բարակ ու նուրբ, մյուսի մոտ՝ չոր կամ կոշտ։ Խոհարարները վստահեցնում են՝ իդեալական բլինչիկը ոչ թե «գաղտնի» բաղադրիչ ունի, այլ ճիշտ համադրություն, ջերմաստիճան և ժամանակի զգացում։
Իդեալական բլինչիկի հիմքը հավասարակշռված խմորն է։ Ալյուրը պետք է մաղել՝ խմորը օդով հագեցնելու համար, իսկ հեղուկը (կաթ կամ կեֆիր) ավելացնել աստիճանաբար՝ խուսափելով գնդիկներից։ Ձուն ոչ միայն համ է տալիս, այլ նաև կապում է խմորը, իսկ շաքարի չափազանց մեծ քանակը կարող է արագ այրել բլինչիկը։ Մի փոքր աղը պարտադիր է նույնիսկ քաղցր տարբերակում՝ համը հավասարակշռելու համար։
Մասնագետները կարևորում են խմորի «հանգստի» փուլը։ Խառնելուց հետո այն ցանկալի է թողնել 15–20 րոպե․ այդ ընթացքում ալյուրը լիովին կլանում է հեղուկը, և բլինչիկները տապակվելիս ավելի համաչափ են ստացվում։ Սա այն մանրուքներից է, որին հաճախ ուշադրություն չեն դարձնում, բայց հենց այն է տարբերում սովորականը հաջողվածից։
Տապակման փուլը ևս վճռորոշ է։ Թավան պետք է լավ տաքացած լինի, բայց ոչ ծխացող։ Առաջին բլինչիկը հաճախ անվանում են «փորձնական»․ այն օգնում է հասկանալ՝ ջերմաստիճանն ու խմորի խտությունը ճիշտ են ընտրված, թե ոչ։ Յուղը պետք է քիչ լինի՝ պարզապես թավան թեթև պատելու համար, որպեսզի բլինչիկը տապակվի, ոչ թե խաշվի։
Վերջապես, իդեալական բլինչիկը միայն տեսքը չէ, այլ նաև զգացողությունը։ Այն պետք է լինի բարակ, փափուկ, առանց կոշտ եզրերի, հեշտ ծալվող և համի մեջ՝ նուրբ։ Անկախ նրանից՝ մատուցվում է մեղրով, մուրաբայով, թթվասերով կամ աղի միջուկով, ճիշտ պատրաստված բլինչիկը միշտ մնում է սեղանի ամենապահանջված ուտեստներից մեկը։
Այսպիսով, իդեալական բլինչիկի գաղտնիքը ոչ թե բարդ բաղադրատոմսն է, այլ ուշադրությունը մանրուքների նկատմամբ․ ճիշտ խմոր, մի փոքր համբերություն և լավ տաքացած թավա։
