Երշիկը շարունակում է մնալ ամենաշատ սպառվող մսամթերքներից մեկը, սակայն ոչ բոլոր երշիկներն են անվտանգ և որակյալ։ Շուկայում հաճախ հանդիպում են արտադրանքներ, որոնք արտաքուստ գրավիչ են, բայց իրականում կարող են պարունակել վտանգավոր հավելումներ ու փոխարինիչներ։ Ահա մի քանի «գաղտնի նշաններ», որոնց միջոցով հնարավոր է տարբերել որակյալ երշիկը անորակից։

Առաջին հերթին ուշադրություն դարձրեք գույնին։ Բնական մսից պատրաստված երշիկը ունենում է մեղմ վարդագույն կամ բաց շագանակագույն երանգ։ Չափազանց վառ, կարմիր կամ «փայլուն» գույնը հաճախ վկայում է ներկանյութերի և նիտրիտների մեծ քանակի մասին, որոնք կարող են վնասել առողջությանը։

Երկրորդ կարևոր նշանը հոտն է։ Որակյալ երշիկը ունի թեթև, բնական մսի կամ համեմունքների բույր։ Եթե հոտը սուր է, քիմիական կամ չափազանց ծխային, դա կարող է խոսել համային ուժեղացուցիչների կամ փչացած հումքի օգտագործման մասին։

Կտրելիս ևս կարելի է հասկանալ շատ բան։ Լավ երշիկի կտրվածքը համաչափ է, առանց օդային խոռոչների կամ ժելեային շերտերի։ Եթե ներսում նկատվում են խոռոչներ, ջրային կուտակումներ կամ անհամաչափ կառուցվածք, դա հաճախ նշան է, որ արտադրանքի մեջ ավելացված է մեծ քանակով ջուր և սոյա։

Ուշադրություն դարձրեք նաև փաթեթավորմանը և մակնշմանը։ Որակյալ արտադրանքի վրա պարտադիր նշված են արտադրողի անունը, արտադրության ամսաթիվը, պիտանելիության ժամկետը և ամբողջական բաղադրությունը։ «Միս պարունակող արտադրանք» ձևակերպումը սովորաբար նշանակում է, որ մսի քանակը նվազագույն է։

Մեկ այլ կարևոր ցուցիչ է գինը։ Չափազանց էժան երշիկը հազվադեպ է լինում որակյալ։ Բնական միսը թանկ հումք է, և շատ ցածր գինը սովորաբար փոխհատուցվում է փոխարինիչներով՝ օսլա, սոյա, համային ուժեղացուցիչներ։

Վերջապես՝ փորձարկեք համը։ Որակյալ երշիկը ունի բնական, հավասարակշռված համ և չի թողնում դառը կամ քիմիական հետհամ։ Եթե ուտելուց հետո առաջանում է տհաճ զգացողություն կամ ուժեղ ծարավ, դա ևս կարող է վկայել հավելումների առատության մասին։
