Խաշ. Այն, ինչ չգիտեիք այդ ուտեստի մասին

Խաշը, որը պատրաստում են տավարի տոտիկներից, հայկական հնագույն ուտեստներից է համարվում եւ մինչ օրս էլ ջերմորեն սիրված է ամբողջ աշխարհի հայերի կողմից: Ինչպե՞ս է խաշի օգտագործումն ազդում առողջության վրա: Վտանգավո՞ր է «ծանր» ուտեստ համարվող խաշը մարսողության համար ընդհանրապես եւ առողջության համար ընդհանուր առմամբ:
Ինչպես NEWS.am Medicine-ի թղթակցին պատմել է գաստրոէնտերոլոգ Հայկ Մանասյանը, խաշի առումով ամեն ինչ այնքան պարզ չէ, որքան կարող է թվալ առաջին հայացքից: Խաշը եփվում է ոսկրերից, այդ պատճառով ապուրը հիմնականում կազմված է լինում այսպես կոչված ոսկրային նյութից (կոլագենից), որը ստացվում է ոսկրերը եռացնելու արդյունքում: Հենց կոլագենի առկայությամբ է բացատրվում այն, որ սառելով` խաշը ժելեի է նմանվում:
Ինչպես բացատրել է մասնագետը, իրականում այդ ոսկրային նյութը` կոլագենը, օրգանիզմի կողմից չի յուրացվում, որովհետեւ մարդը (ի տարբերություն ոսկրեր ուտող կենդանիների) ուղղակի չունի այնպիսի ֆերմենտներ, որոնք կարողանային յուրացնել այն: Ստացվում է, որ խաշն իրականում չի մարսվում մեր օրգանիզմում. աղիքները, ոչինչ չյուրացնելով, ուղղակի դուրս են հանում այն:
Այդ դեպքում ինչո՞ւ են խաշը սովորաբար առավոտյան ուտում, իսկ դրանից հետո երկար ժամանակ քաղց չեն զգում:
Ամեն ինչ շատ պարզ է: Պարզվում է` խաշին կալորիականություն են հաղորդում հացը /լավաշը եւ յուղը (եթե այն ավելացնում են ուտեստին): Իսկ եթե խաշ ուտենք առանց դրանց, շատ արագ դարձյալ քաղց կզգանք: Իսկ առանց աղի եւ սխտորի ուղղակի անհնար կլինի ուտել դա. խաշն ինքնին համ չունի:
Այսպիսով, ստացվում է, որ խաշը, որպես այդպիսին, սննդային ոչ մի արժեք չունի, փոխարենը խմորից պատրաստված սննդամթերքը (հացը եւ լավաշը) շատ կալորիաներ ունեն, եւ մարդիկ դրանք շատ են ուտում խաշի հետ: Այդ ամենը խաշը դարձնում է «ծանր», դժվարամարս ուտեստ:
