Կլիմայի փոփոխությունը նվազեցնում է գյուղատնտեսական մշակաբույսերի սննդարար արժեքը՝ մեծացնելով «թաքնված սովի» վտանգը: Այս մասին գրել է ՇՄՆ «Հիդրոօդերևութաբանության և մոնիթորինգի կենտրոն» ՊՈԱԿ-ի տնօրեն Լևոն Ազիզյանը։
Կլիմայի փոփոխությունն ու մթնոլորտում ածխաթթու գազի (CO₂) խտության 
աճը կարող են նվազեցնել գյուղատնտեսական մշակաբույսերի մեջ կարևոր սննդարար նյութերի պարունակությունը։ Արդյունքում մարդկությունը կարող է բախվել ոչ միայն սննդամթերքի քանակի, այլև դրա որակի խնդրին՝ այն երևույթին, որը գիտնականներն անվանում են «թաքնված սով»։
«Թաքնված սով» ասելով՝ նկատի ունեն այն իրավիճակը, երբ մարդը ստանում է բավարար քանակությամբ կալորիաներ, սակայն նրա օրգանիզմում առկա է կենսական նշանակություն ունեցող միկրոտարրերի և վիտամինների պակաս։ Սա հատկապես վտանգավոր է այն տարածաշրջաններում, որտեղ մարդկանց սննդակարգը հիմնականում հիմնված է մի քանի մշակաբույսերի՝ բրնձի, ցորենի, եգիպտացորենի և այլ հացահատիկների վրա։
Հետազոտությունները ցույց են տալիս, որ մթնոլորտում CO₂-ի մակարդակի բարձրացումը կարող է փոխել բույսերի քիմիական կազմը։ Ածխաթթու գազի ավելցուկի պայմաններում շատ մշակաբույսեր ավելի արագ են կուտակում կենսազանգված, սակայն դրանց հյուսվածքներում նվազում է սպիտակուցի, երկաթի, ցինկի և մի շարք վիտամինների խտությունը։
Դա պայմանավորված է բույսերի ֆոտոսինթեզի և նյութափոխանակության առանձնահատկություններով։ Լրացուցիչ ածխածինը խթանում է ածխաջրերի առաջացումը, սակայն մյուս սննդարար տարրերի պարունակությունը նույն համամասնությամբ չի ավելանում։ Արդյունքում բույսը կարող է ունենալ առողջ տեսք և ապահովել բարձր բերքատվություն, բայց դրա սննդարար արժեքը կլինի ավելի ցածր։
Գիտնականների ամենամեծ մտահոգությունը վերաբերում է այն մշակաբույսերին, որոնք հանդիսանում են միլիարդավոր մարդկանց սննդակարգի հիմքը։ Օրինակ՝ հացահատիկային մշակաբույսերում երկաթի և ցինկի պարունակության նվազումը կարող է մեծացնել սակավարյունության (անեմիայի) և այլ առողջական խնդիրների վտանգը, հատկապես այն երկրներում, որտեղ բազմազան սննդակարգը սահմանափակ է։
Միաժամանակ մասնագետները շեշտում են, որ ածխաթթու գազը բերքի սննդարար արժեքի փոփոխության միակ պատճառը չէ։ Բույսերի սննդային որակի վրա ազդում են նաև օդի ջերմաստիճանի բարձրացումը, երաշտները, հողերի դեգրադացիան և գյուղատնտեսական տեխնոլոգիաների փոփոխությունները։
Խնդրի լուծման համար գիտնականները դիտարկում են մի շարք ուղղություններ՝ սկսած բարձր սննդարար արժեք ունեցող նոր սորտերի ստեղծումից մինչև ագրոտեխնոլոգիաների կատարելագործում և հողերի ավելի արդյունավետ կառավարում։ Հեռանկարային մոտեցումներից մեկը բիոֆորտիֆիկացիան է՝ բույսերի այնպիսի սորտերի ստեղծումը, որոնք ունակ են ավելի շատ վիտամիններ և միկրոտարրեր կուտակել։
Այսպիսով, ապագայի պարենային անվտանգությունը կախված է ոչ միայն գյուղատնտեսության կողմից արտադրվող սննդի քանակից, այլև դրա սննդարար արժեքից։ Կլիմայի փոփոխության պայմաններում բերքի սննդային որակի պահպանումը դառնում է համաշխարհային պարենային համակարգի կարևորագույն մարտահրավերներից մեկը։
