Ձուն ճիշտ խաշելու գիտական մոտեցում

Թվում է, ի՞նչ կա ավելի հեշտ, քան ձու խաշելը: Ջուր են լցնում, մի փոքր աղ ավելացնում, որպեսզի ձուն չճաքի և սպասում մի որոշ ժամանակ:
Բայց արդյունքում կարող է ստացվել այնպես, որ սպիտակուցը կարող է չափազանց էլաստիկ, իսկ դեղնուցն էլ չափազանց չոր ստացվել կամ սպիտակուցը կարող է կպնել կեղևին և դժվարեցնել կեղևազրկումը:
Այդ ամենը տեղի է ունենում այն պատճառով, որ ձուն փաստացի կազմված է երկու տարբեր նյութերից: Որպեսզի հասնել անհրաժեշտ եփվածության, սպիտակուցին և դեղնուցին հարկավոր են տարբեր ջերմաստիճաններ: Սպիտակուցի իդեալական ջերմաստիճանը 80 օC է: Այդ ջերմաստիճանում սպիտակուցը արդեն պնդանում է, բայց չի կորցնում իր փափկությունը և «ռետինե» չի դառնում:
Իսկ դեղնուցի համար իդեալական ջերմաստիճանը 5 աստիճանով ցածր է՝ 77oC: Եթե անցնել այդ սահմանը, այն դառնում է չոր, փխրուն և ձեռք է բերում ոչ դուրեկան՝ կանաչամոխրագույն երանգ:

Նա 30 վայրկյանով իջեցրեց հավկիթները եռացող ջրի մեջ, իսկ հետո այդ ջրին ավելացրեց սառույցի կտորներ և նորից հասցրեց եռման ջերմաստիճանի: Իսկ որպեսզի հասնել անհրաժեշտ եփվածության, խոհարարը ամեն 30 վայրկյանը մեկ հանում էր հավկիթները ջրից և ստուգում դրանց վիճակը:
Եվ ահա թե ինչպիսի արդյունք նա ստացավ.
