Խոշոր ձկներն անհրաժեշտ է եփել սառը, իսկ մանրերը՝ եռացրած ջրում Ձուկը մեր սննդակարգում կարեւոր նշանակություն ունեցող մթերք է: Ուստի այն գնելիս առաջինը պետք է ուշադրություն դարձնել թարմությանը, որը որոշելու համար պարզապես պետք է այն ընկղմել ջրով լի ամանի մեջ եւ եթե սուզվի, ապա թարմ է: Բայց մինչեւ ջրով փորձարկելը, պետք է ուշադրություն դարձնել արտաքին տեսքին: Թարմ ձուկն ունի փայլուն, հարթ թեփուկներ, թափանցիկ աչքեր, վառ կարմիր գույնի խռիկներ եւ մատով սեղմելուց առաջացած փոսիկն անմիջապես ուղղվում է: Ձուկը չի կարելի պահել առանց մաքրելու: Այն շուտ եւ հեշտ կմաքրվի թեփուկներից, եթե նախապես թրջեք քացախով, իսկ մաքրելու ժամանակ, որպեսզի այն լպրծուն չլինի՝ ձեռքերը աղով թաթախել:

Ձուկը պետք է եփել նախապես լավ տաքացրած ջեռոցում, իսկ տապակելու համար խորհուրդ է տրվում ձուկը նախապես աղ դնել, որպեսզի այն տապակելու ընթացքում չփշրվի: Տապակելիս կրակը պետք է բարձր լինի: Որոշ տանտիրուհիներ առանց բուսական յուղի են տապակում եւ մատուցելու ժամանակ վրան կարագ են քսում՝ ավելի նուրբ համ ստանալու համար:

Շեշտված հոտ ունեցող ձուկը խորհուրդ է տրվում եփել առատ ջրով, իսկ գետի ձկան հոտը մասնակի անցկացնելու համար անհրաժեշտ է եփելուց առաջ քսել քացախ եւ ապա փաթաթել թղթով:

 

Խոշոր ձկներն անհրաժեշտ է եփել սառը, իսկ մանրերը՝ եռացրած ջրում: Եթե կոկորդում ձկան փուշ է մնացել, անմիջապես պետք է կիտրոնի հյութ խմել: Ջեռոցում դրված ձկան պատրաստ լինելը ստուգելու համար մեջքի լողակը թեթեւակի քաշել, եթե անմիջապես պոկվի, ուրեմն պատրաստ է:

Ձուկը համեղ եւ դյուրամարս կլինի, եթե այն 1 ժամ գարեջրի մեջ պահեք, ապա հանեք եւ տապակեք տաք բուսայուղի մեջ: Թարմ ձուկն ամռանը կարելի է առանց սառնարանի պահել, եթե նախօրոք մաքրեք փորը, հեռացնեք խռիկները, բայց չլվանալ, այլ մաքրել խոհանոցային անձեռոցիկով, եւ դրսից, եւ ներսից աղ ու պղպեղ ցանել: Պահել լավ օդափոխվող սենյակում: Մետաղյա տուփով պահածոյացված ծովատառեխը բացելուց հետո խորհուրդ է տրվում անմիջապես դատարկել ապակյա տարայի մեջ, գարեջուրը եռացնել հատիկավոր պղպեղի եւ դափնետերեւների հետ, սառեցնել եւ լցնել ձկան վրա:

Տարայի երեսին բարակ շերտով բուսական յուղ լցնել եւ ծածկել կափարիչով: Եթե աղ դրված ծովատառեխը նախօրոք լվանաք սառը ջրով, ապա այն ավելի նուրբ եւ համեղ կլինի:

Եթե ծովատառեխը նուրբ է եւ փափուկ, պահեք այն թեյի մուգ թուրմի մեջ, որպեսզի պնդանա, իսկ եթե պինդ է՝ կաթի մեջ, որ փափկի: Տապակած ձկան հոտը չեզոքացնելու համար կարելի է խնկամանի մեջ թեյի տերեւներ լցնել եւ այրել: Նույն գործողությունը կարելի է կատարել բոլոր այն սենյակներում, որտեղ տարածվել է այդ հոտը: Որպեսզի կարմրախայտը տապակելիս ձեւավոր մնա, նախքան ալյուրի մեջ թաթախելը, այն թաթախեք նաեւ կաթի մեջ: Խաշած ձկան հետ կարող եք մատուցել խաշած կարտոֆիլ, իսկ տապակածի հետ՝ տապակած կամ խաշած կարտոֆիլ: Կարելի է մատուցել նաեւ հաճարով կամ բրնձով փլավ:
