Ինչ են ուտում Ղարաբաղում

Շուշիի ազատագրումը նշանակալից հաղթանակ էր մեզ համար: Մայիսի 9-ին նշվում է Շուշիի ազատագրման օրը և Reservin Armenia-ն անդրադառնում է Ղարաբաղի ազգային ուտելիքներին:
Ղարաբաղյան խոհանոցն ունի խորը արմատներ: Ամենատարբեր համերի և հոտերի զարմանալի համադրությունը Ղարաբաղի ուտելիքները դարձնում են էլ ավելի յուրահատուկ: Կերակուրները մեծ մասամբ պատրաստվում են մսից և Ղարաբաղի լեռներում աճող բանջարեղեններից:
Ղարաբաղում ամենատարածված ուտելիքը բոլորիս հայտնի ժենգյալով հացն է:
Ժենգյալով հացը համարվում է ծիսական կերակրատեսակ, որի խորհուրդը բարեկամներին համախմբելն է: Գրտնակի օգնությամբ խմորը հարթվում, դառնում է թղթի նման բարակ, որից հետո այն լցվում է մանր կտրատած, մոտ 20 տեսակի վայրի բույսերից պատրաստված և բուսական յուղով համեմված լցոնով:
Այն թխվում է լավ տաքացվող երկաթե հարթ կամ էլիպսաձև հարմարանքի` սաջի, վրա, որտեղ «կարկանդակը» պատրաստվում է մի քանի րոպեում: Ավանդական ճաշատեսակ է նաև կորկոտը, կամ ինչպես ասում են տեղացիները՝ Կուրկուտ: Կորկոտն ունի պատրաստման երկար գործընթաց: Ցորենի հատիկները թրջում են, ճզմում և ամբողջ գիշեր եփում խոզի, սագի կամ հնդկահավի մսով:
Ղարաբաղյան խոհանոցը հարուստ է բանջարեղենային կերակրատեսակներով և աղցաններով: Պատրաստում են ձիու թրթնջուկ, փիփերթ, ձնծաղիկների սոխուկներ, որոնք նախապես մի քանի րոպե եփվում են եռացրած ջրի մեջ, որից հետո դրանցով ապուր կամ տարբեր աղցաններ են պատրաստվում: Այստեղ պատրաստում են նաև թերթերում՝ մեղրով հաց, բիշին՝ գաթա: Չորացած հոնից, մասուրից, հասած զկեռից պատրաստում են՝ կճեխաշ, քլնգոշ:
Ավանդական ուտելիքների շարքին են դասվում նաև շփոթը, խաշիլը, լոբախաշուն, կանաչ լոբով խաշլաման: Հոնով, մոշով, տաքդեղով և լոլիկով պատրաստում են հետաքրքիր դդումով ճաշ: Իսկ հավը լցոնում են բրնձով, չոր կանաչիով, սոխով, հոնի և սալորի չրով: Ղարաբաղում յուրովի պատրաստում են խորոված՝ խոզի, ոչխարհի կամ հորթի մսից: Նաև տոլմա, խաշլամա և խաշ՝ տավարի ոտքերից:
