Dulce de leche իսպաներենից թարգմանաբար նշանակում է «քաղցր կաթ»: Այս կերպ պատրաստված խտացրած կաթը «Ալֆախորես» թխվածքաբլիթի միջուկն է, որը համարվում է Իսպանիայի, Արգենտինայի և Պերուի սիրված քաղցրավենիքներից մեկը։ Այն կարելի է մատուցել կոկտեյլների, կեքսերի և պաղպաղակների հետ։
Պատրաստման եղանակ
- Բաղադրիչների նշված քանակից ստացվում մոտ 420 գր եփած խտացրած կաթ:
Կաթսայի մեջ ենք լցնում կաթը, շաքարավազը, սոդան և վանիլինը։ Դնում ենք միջին ուժեղության կրակի վրա և հասցնում եռման աստիճանի (հետևում ենք, որ կաթը չթափվի)։ Եթե արդեն կաթը կրեմագույն է (մոտ 20 րոպե հետո), կրակն իջեցնում ենք։
- Դանդաղ կրակի վրա կաթն անընդհատ խառնելով, մոտ 1 ժամ եփում ենք։ Եթե խտացրած կաթը կրակից 5-10 րոպե շուտ վերցնենք, ապա այն ավելի ջրիկ կստացվի և շատ հարմար կլինի օգտագործել որպես կարամելային սոուս:
Մոտ 65 րոպե հետո խառնուրդը կթանձրանա և մուգ կարամելագույն կդառնա։
- Եթե նշված ժամանակից հետո խառնուրդը չի թանձրացել, պետք չէ անհանգստանալ, քանի որ այն կթանձրանա սառչելու ընթացքում։
Կրակի տակն անջատում ենք և խտացրած կաթը մոտ 5 րոպե խառնում։ Սառեցնում ենք և 1 ժամով տեղափոխում սառնարանը։ Ահա և վերջ:
