Ինչպե՞ս կարող է բանջարեղենի կտրված ձևը ազդել դրա համի վրա

Շեֆ խոհարար Բրենդեն Ուալշն ասում է, որ շեֆ խոհարարներին սովորեցնում են բանջարեղենը կտրատելու արվեստը, քանի որ ճիշտ կտրատելը կարող է մեծ ազդեցություն ունենալ համի վրա:
Սննդի քննդատ և բլոգեր Լեզլի Բրեններն ասում է, որ բանջարեղենը ճիշտ կտրատելը շատ կարևոր է, քանի որ կտրված մակերեսը ազդում է բանջարեղենի համի վրա:
«Եփելու մեթոդը ավելի լավ է ներթափանցվում բանջարեղենների մեջ, երբ վերջիններս ճիշտ են կտրատված,» - ասում է Լեզլի Բրենները:
«Ես դրանք ուղղահայաց կտրում եմ և բաժանում երկու մասի, ապա երկու մասն էլ խորովում, ինչը հրաշալի համ է տալիս:»
Ըստ Բրենների լավ կտրատված բանջարեղենները ավելի լավ են համեմվում այլ բաղադրիչների հետ, օրինակ կարագի, աղի կամ մարինադի հետ:
Իսկ շեֆ խոհարար Պիտ Սնաիթը նույնիսկ մտածում է, որ բանջարեղենի կտրվածքն ազդում է նաև մարդկանց ուղեղի կողմից սնունդի ընկալման վրա:
«Եթե դուք շրջանաձև կտրվածքով բանջարեղեն եք դնում ձեր բերանի մեջ, դուք սկսում եք մտածել, որ դուք ավելի հյութեղ բան եք ուտում,» - ասում է նա:
«Իսկ քառակուսի կտրվածք ունեցող բանջարեղեն փորձելիս մեզ թվում է, որ մենք ուտում ենք չոր եզրերով և կոշտ սնունդ:»
Իսկ բույրի մասին շեֆ խոհարար Ֆուլլերն ասում է. «Եթե դուք լոլիկը շերտավոր կտրատում եք և տարածում ափսեի վրա, ապա դրա բույրն ավելի է տարածվում, քան թե եթե լոլիկը սովորականի նման չորս մասի եք բաժանում և դնում իրար վրա: Նույնն էլ կարելի է ասել դրանց համերի մասին: Դրանք միանշանակ տարբերվում են:»
Երբ դուք կտրատում եք բանջարեղենը, դուք բացում եք դրա այն բջիջները, որոնք էնզիմ են արտադրում, որն էլ իր հերթին խթանում է բույր արտադրելու քիմիական ռեակցիային: Ինչքան բարակ կտրատեք բանջարեղենը, այնքան ավելի շատ էնզիմներ կարտադրվեն և, հետևաբար, ավելի շատ կտարածվի բանջարեղենի բույրը:
