  • շաքարավազ - 2 թ/գդ
  • աղ - 0,5 թ/գդ
  • Լցոնի համար՝
  • պանիր սուլուգունի - 500 գր
  • ձու - 2 հատ
  • կարագ - 25-30 գր
 

Պատրաստման եղանակ

  1. Պատրաստում ենք խմորը: Կաթը թեթևակի տաքացնում ենք, լցնում խորը ամանի մեջ, ավելացնում խմորիչը, 2 ճ/գդ բուսայուղ (մոտ 20 գրամ) և մի փոքր շաքարավազ: Խառնում ենք, որպեսզի խմորիչը լուծվի: Ծածկում ենք սրբիչով ու 30 րոպե թողնում տաք տեղում: Հետո ավելացնում ենք մածունը, ձուն, շաքարավազն ու աղը: 300 գրամ ալյուր ենք ավելացնում ու խառնում, որպեսզի բաղադրիչները միանան:

  2. Հետո ևս 100 գրամ ալյուր ենք լցնում ու խմորը լավ խառնում՝ քիչ-քիչ ավելացնելով մնացած 50 գրամ բուսայուղը և մնացած ալյուրը: Խմորը 20 րոպե հունցում ենք: Արդյունքում ստանում ենք փափուկ, հարթ, առաձգական ու փոքր-ինչ կպչուն խմոր, որը պետք է գնդել ու դնել ձիթապատ խորը ամանի մեջ, ծածկել սրբիչով ու թողնել մեկ ժամ:
    Երբ խմորը հասունանում և ուռչում է, թեթևակի սեղմում ենք ու թողնում ևս 1.5 ժամ: Երկրորդ անգամ խմորն ավելի շատ է ուռչում:

  3. Խմորը դնում ենք ալրապատ մակերևույթի վրա, մի թեթև հունցում ենք, երկար գլանի տեսք տալիս ու բաժանում երեք մասի (կարելի է և 4-5 մասի բաժանել՝ ավելի փոքր խաչապուրիներ ստանալու համար): Թողնում ենք 10-15 րոպե:

  4. Պատրաստում ենք լցոնը: Պանիրը խոշոր քերում ենք, ավելացնում 1 ձուն, խառնում: Կարագը հալեցնում ենք, լցնում պանրի վրա: Ստացվում է թանձր, ենթարկվող զանգված, որը բաժանում ենք 3 մասի (խմորի գնդերի քանակով) գնդում:

  5. Խմորի գնդերը 1-1.5 սմ հաստությամբ բացում ենք, վրան դնում պանրով զանգվածի գունդը, տրորում ու տարածում խմորի մակերևույթին: Հետո խմորի եզրերը վրա ենք բերում, ամրացնում ու ծածկում լցոնը: Շրջում ենք և զգուշորեն գրտնակում՝ տրամագիծը հասցնելով 20-23 սմ (խմորն ամուր է և չի պատռվում):

  6. Ստացված խաչապուրին դնում ենք թեթևակի յուղած տապակի մեջ, երեսին հարած ձու ենք քսում և թողնում 20-30 րոպե: Ջեռոցը տաքացնում ենք 200 աստիճան: Խաչապուրու երեսը պատառաքաղով ծակծկում ենք, իսկ մեջտեղում կտրվածք անում կամ ծակում: Թխում ենք մոտ 20 րոպե, մինչ վարդագունելը: Ջեռոցից հանելուց հետո 10 րոպե հովացնում ենք և հետո միայն մատուցում (այլապես կտրելիս պանիրը կծորա):
