- Միջուկի համար
- Պանիր (ցանկալի է իմերեթական) -1 կգ
- Ձու (միայն դեղնուցը) վրան քսելու համար- 1 հատ
- Ձու- 1-2 հատ (ըստ ցանկության)
- Թթվասեր՝ վրան քսելու համար- 1 ճաշի գդալ
- Կարագ- 50 գր
Պատրաստման եղանակը
Տաքացնել կաթը, ցանել շաքարավազը և խմորիչը, լցնել մի փոքր բուսական յուղ, լցնել ալյուրը և 15 րոպե դնել տաք տեղում: Դրանից հետո ավելացնել մածունը և ալյուրի մեծ մասը, կոտրել ձուն և հարել: Անհրաժեշտության դեպքում ավելացնել ալյուր: Ավելացնել հալեցված և հովացրած կարագը և աղ: Շարունակել հարել ևս 20 րոպե՝ ժամանակ առ ժամանակ ձեռքերին բուսական յուղ ավելացնելով և այն խմորի վրա տարածելով: Պատրաստի խմորը չպետք է կպչի մատներին: Խմորից գունդ պատրաստել, ցանել ալյուրով, ծածկել սրբիչով և 2 ժամ թողնել տաք տեղում:
Իմերեթական խաչապուրի
8-10 բաժնի համար
Հունցել և թողնել` հանգստանա ևս 1-1.5 ժամ:
Միջուկի համար քերել պանիրը` ըստ ցանկության հարել 1-2 ձու, և ավելացնել փափկեցված կարագը:
Պատրաստի խմորը բաժանել ըստ մասնաբաժինների՝ նայած, թե ինչ չափի եք ցանկանում մեկ կտորը լինի: Մեկ մասնաբաժինը գնդել և բացել, ցանել ալյուր: Քերած պանիրը նույնպես բաժանել ըստ մասնաբաժինների, այնպես, որ բոլոր կտորները հավասարաչափ պանիր ունենան: Պանրից գունդ պատրաստել, դնել խմորի կենտրոնում, խմորի անկյունները հավաքել և քարկապ անել:
Այնուհետև խմորը շրջել և գրդնակել մինչև մեկ սանտիմետր դառնալը: Խաչապուրու վրա քսել ձվի դեղնուցի և թթվասերի խառնուրդը, դնել ափի մեջ և տակը յուղ քսել, պատառաքաղով մի քանի անգամ ծակծկել, իսկ մեջտեղում փոքրիկ անցք բացել:
Թխել 180 աստիճան տաքացված ջեռոցում` 20-25 րոպե: Երբ երեսը վարդագույն դառնա, հանել խաչապուրին և ծածկել սրբիչով: Մատուցել 10 րոպե հետո, երբ պանիրը կպնդանա և չի ծորա կտրելու ժամանակ:
