«Փաստ» օրաթերթը գրում է

Խաղողի լավագույն տեսակներից մեկը՝ ճանաչված «արիստոկրատ» Պինո Նուարն այսօր հանդիսանում է համաշխարհային գինեգործության լավագույն գինիների հիմքը: Միևնույն ժամանակ, այդ խաղողի տեսակն ունի շատ բարդ «բնավորություն»: Հաճախ կլիմայի և հողի հետ կապված՝ դժվար է կռահել Պինո Նուարի բերքի որակը: Շատ առումներով, նման քմահաճությունը պայմանավորված է այդ տեսակի խաղողի որթի հաճախակի մուտացիաների միտումով: Սակայն նրան ներում են այդ բոլոր նյարդայնացնող հատկանիշները։ Ֆրանսերենից «pinot noir»-ը թարգմանվում է որպես «սև կոն»: Այդ խաղողի տեսակն իր անունը ստացել է խաղողի խիտ և կոմպակտ ողկույզի բնորոշ տեսքի համար, որն իսկապես ինչ-որ չափով կոն է հիշեցնում:

Այդ խաղողի ծննդավայրը Բուրգունդիան է, որը Ֆրանսիայի այն տարածաշրջանում է, որում Պինո Նուարն իրեն լավագույնս է դրսևորում։ Բացի իր հայրենիքից, Պինո Նուարը իրեն լավ է զգում նաև Շամպայնի խաղողի այգիներում։ Իրականում Պինոն խաղողների այն տեսակներից է, որոնց մենք պարտական ենք փրփրուն գինիների լավագույն տեսակների համար: Ինչպես ասում են ֆրանսիացի գինեգործները, հենց Pinot Noir-ն է շամպայնին տալիս համի ամբողջականություն։ Հարկ է նշել, որ այդ խողողի աշխարհագրությունը չի սահմանափակվում միայն Ֆրանսիայով: Պինոն լավ արմատավորվել է ԱՄՆ-ում՝ Օրեգոն նահանգում, Սանտա Բարբարայում և Կալիֆորնիայի կենտրոնական շրջաններում։ Իտալիայում նրա տարածքը Վենետո շրջանն է։ Պինոն աճեցվում է նաև Ավստրալիայում և Նոր Զելանդիայում:

Ընդհանուր առմամբ, այս աշխարհագրությունից պարզ է դառնում, որ այն «սիրում» է զով կլիմա։ Միևնույն ժամանակ, նույնիսկ իդեալական կլիմայական պայմանները չեն երաշխավորում գերազանց արդյունք, քանի որ այդ խաղողը ոչ միայն դժվար է աճեցնել, այլ նաև դժվար է դրանից գինի պատրաստել։ Պինո Նուարը ստացել է ճանաչում իր փոփոխականության զարմանալի ունակության և անուշաբույր հատկությունների շնորհիվ, որոնք անհամեմատ ավելի շատ են, քան կարմիր խաղողի մյուս տեսակների մոտ: Դեղձի և հատապտուղների համը (ելակ, ազնվամորի, հաղարջ և կեռաս) լրացվում է մշկընկույզի և կակաոյի բարդ բույրով, ինչի արդյունքում ստացվում է զարմանալի գեղեցիկ և բարդ համի ծաղկեփունջ:

Չնայած իր բարդ համային փնջին, այդ խաղողի գինիները հիանալի համադրվում են բազմաթիվ ուտեստների հետ: Թռչնամսի առաջին և երկրորդ ճաշատեսակներ (հատկապես բադ), ձուկ, միս, պանիր (հատկապես հնեցված), աղանդեր. Պինոն ամենուր ցույց է տալիս իր լավագույն կողմերը: Ընդ որում, նման գինին համակցված է նույնիսկ մեր երկրում տարածված խորովածի ու քաբաբի հետ։ Գինին պետք է մատուցել 12-14 աստիճան սառեցված վիճակում, քանի որ այդ դեպքում է նրա «բնավորությունը» լավագույնս բացահայտվում։
