Սիրելի ընթերցողներ, նախորեին մամուլում հրապարակում հայտնվեց, որտեղ նշվում էր, որ «Իրազեկ և պաշտպանված սպառող» ՀԿ-ի կողմից լաբորատոր փորձաքննության ներկայացվեց կաթնամթերք, որում հայտնաբերվել են շեղումներ մի քանի ցուցանիշներով, որոնցից մեկը բորբոսասունկն է։ Այս հրապարակման մեջ կանդրադառնամ բորբոսասնկերին, նրանց ազդեցությանը մարդու օրգանիզմի վրա և ինչպես խուսափել ախտահարումներից։
Բորբոսասնկերի մասին գիտեն գրեթե բոլորը, շատերս մեր կյանքի ընթացքում ականատես ենք լինում, թե ինչ ազդեցություն է ունենում բորբոսը սննդամթերքի վրա, այդ թվում հացի, տոմատի մածուկի, կաթնամթերքի վրա։ Գոյություն ունի բորբոսասնկերի ավելի քան 350 տեսակ, որոնցից 240 տեսակը թունավոր են։ Այսօր չենք խոսի այն բորբոսասնկերի մասին, որոնք օգտագործվում են մարդկանց կենցաղում (գինու, պանիրների պատրաստում, հակաբիոտիկներ և այլ)։
Տեսնենք թե ինչպես բորբոսասնկերը կարող են հայտնվել կաթնամթերքում։
Քանի որ սնկերի սպոռները ամենուր են, բարենպաստ պայմանների ստեղծվելուն պես սկսում են զարգանալ և առաջացնել գաղութներ։ Բորբոսասնկի համար բարենպաստ պայմաններ են՝ խոնավությունը 15% և ավելի, ոչ պատշաճ օդափոխություն: Կաթնամթերքում բորբոսասնկերը կարող են հայտնվել այն դեպքում երբ արտադրամասի մակերեսները ծածկված չեն ջրադիմացկուն նյութերով։ Հաջորդ աղբյուրը կարող է հանդիսանալ արտադրամասի սառնարանային պայմանները, կան բորբոսասնկերի տեսակներ, որոնք ակտիվանում են -9+5°C աստիճանի պայմաններում. -12°C-ի պայմաններում սնկերը չեն զարգանում, սակայն կենսունակությունը պահպանում են և կարող են զարգանալ ջերմաստիճանի բարձրացման դեպքում։
Ի՞նչն է բորբոսասնկերից եկող վտանգը։ Բորբոսասնկերի կենսագործունեության ընթացքում առաջանում են թույներ՝ միկոտոքսիններ, աֆլատոքսիններ։ Այս թույները մարդկանց, կամ կենդանիների օրգանիզմում առաջացնում են ստամոքսաղիքային համակարգի խանգարումներ, ըստ որոշ հեղինակների կարող են նաև քաղծկեղածին ազդեցություն ունենալ։
Իսկ հիմա տեսնենք թե ինչպես կարելի է պայքարել բորբոսասնկերի դեմ։
1․ Կաթնամթերքի արտադրամասերը ապահովել լվացվող և ջրակայուն պատերով և առաստաղով
2․ Պահպանել սանիտարահիգիենիկ պայմանները և տեխնոլոգիական կանոնները
3․ Թույլ չտալ, որ արտադրամասում, կամ պահեստային հատվածում օդի խոնավությունը հասնի 60%-ի
4․ Սիստեմատիկ կատարել ախտահանություն և ստուգել ախտահանության որակը։
5․ Կաթնամթերքը գնել միայն սառնարանային պայմաններով ապահովված վաճառակետերից, ուշադրություն դարձնել պիտանելության ժամկետին։
